THANKS to everyone who came to the Visiting Teaching Interviews. You are all wonderful!!!

Here are the soup recipes we promised:

Zesty Pumpkin Soup
6 cups chicken stock or canned low-salt chicken broth
2 cups whipping cream
29-ounce can pumpkin
1/3 cup (packed) dark brown sugar
2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon ground coriander
1/4 teaspoon ground nutmeg
Grated cheddar cheese
Chopped fresh cilantro

Bring chicken stock and whipping cream to boil in heavy medium pot. Whisk in canned pumpkin, brown sugar, cumin, chili powder, coriander and nutmeg. Reduce heat to medium and simmer until soup thickens slightly and flavors blend, about 15 minutes. Season to taste with salt and pepper. (Soup can be prepared up to 1 day ahead. Cool. Cover and refrigerate. Rewarm over medium-low heat, whisking occasionally.) Ladle soup into bowls. Garnish each serving with cheddar cheese and cilantro and serve.


Chicken Noodle Soup

2 quarts chicken broth
1 quart water
1 store-bought roast chicken
3 tablespoons vegetable oil
2 large onions, cut into medium dice
2 large carrots, peeled and cut into rounds or half rounds, depending on size
2 large stalks celery, sliced 1/4 inch thick
1 teaspoon dried thyme leaves
3 cups egg noodles
1/2 cup chopped fresh parsley
Salt and freshly ground black pepper

Bring broth and water to a simmer over medium-high heat in a large soup kettle. Meanwhile, separate chicken meat from skin and bones; reserve meat. Add skin and bones to the simmering broth. Reduce heat to low, partially cover and simmer until bones release their flavor, 20 to 30 minutes. Strain broth through a colander into a large container; reserve broth and discard skin and bones. Return kettle to burner set on medium-high.  Add oil, then onions, carrots and celery.  Saute until soft, about 8 to 10 minutes. Add chicken, broth and thyme. Bring to a simmer.  Add egg noodles, then simmer until tender, 10-20 minutes. Stir in parsley and add salt and pepper, to taste.

Online Bread Making Class: Artisan Bread and 100% Whole Wheat Bread

HERE IS ANOTHER GREAT BREAD RECIPE. IT IS SO SOFT AND FLUFFY THAT YOU WILL HARDLY BELIEVE IT IS MADE WITH 100% WHOLE WHEAT.

Easiest Whole Wheat Bread

Lemon juice in this recipe acts as a dough enhancer which gives bread a fine, light texture. Gluten, a natural protein deprived from wheat, provides elasticity and strength, added texture, helps retain moisture, prevents crumbling, and extends the shelf life of the bread. If you do not want to store gluten flour, you may substitute whole wheat flour in its place.
2(8x4-inch) Loaves:
3 ½ c. whole wheat flour (I prefer hard white wheat flour)
1/3 c. gluten flour
1 ¼ T. instant yeast
2 ½ c. steaming hot tap water (120-130 F)
1 T. salt
1/3 c. oil
1/3 c. honey or ½ c. sugar
1 ¼ T. bottled lemon juice
2 ½ c. whole wheat flour
Mix together first three ingredients with a dough hook. Add water all at once and mix for 1 minute; cover and let rest for 10 minutes. Add salt, oil, honey or sugar and lemon juice and beat for one minute. Add last flour, 1 cup at a time, beating between each cup. Beat for about 6-10 minutes until dough pulls away from sides of the bowl. This makes very soft dough.
Pre-heat oven for 1 minute to lukewarm and turn off. Turn dough onto oiled counter top; divide, shape into loaves place in oiled bread pans. Let rise in warm oven for 10-15 minutes until dough reaches top of pan. Do not remove bread from oven; turn oven to 350 F and bake for 30 minutes. Remove from pans and cool on racks.
If you do not have a mixer with a dough hook and are kneading this by hand, gradually add last cup of flour to keep dough from sticking to counter. You will add more flour when kneading by hand than when using a mixer simply to be able to handle this moist dough. With wheat bread, always add the least amount of flour possible to keep bread moist. Knead 10 minutes before shaping dough into loaves.


IMPORTANT NOTE: To make a recipe of this bread every other day for 1 year (1 loaf/day), you will need 275 lbs. of wheat ground into flour, 4 gallons of oil, 46 lbs. of honey or sugar, 8 (1-lb) pkgs. yeast. 61 c gluten flour, 3 2/3 qts of lemon juice and 7.3 lbs of salt.

Sunday Lesson: Presidency Message, Spiritually Feeding the Family

Food Storage Recipes from our May Dinner

FOOD STORAGE CARROT CAKE 
By Diane Bromley

3 whole powdered eggs (or fresh if you have them)
2 cup sugar
1/2 cup coconut oil (or vegetable oil)
3 cups flour
2 teaspoon cinnamon
1 teaspoon vanilla
2 teaspoon soda
1/2 teaspoon salt
1 can crushed pineapple including the juice (2 1/2 cups)
1 cup dehydrated carrots reconstituted in 2 cups boiling water. Let sit 10 minutes or so and then pour off any excess water. (use 2 cups fresh grated carrots if you have them)

Mix all the above until thoroughly incorporated. Pour into a greased and floured 12x17 cookie sheet. Bake 350 35 minutes or until lightly golden.

Frosting:

1-8oz pkg. cream cheese 
1 stick of butter or 1/2 cup coconut oil
2 teaspoon vanilla
1 1/2 lb. powdered sugar

This frosting freezes well and so does cream cheese. Yes, the texture changes a bit but it is still tasty.


BETTER THAN JIFFY CORNBREAD RECIPE

Grind: ½ cup of popcorn kernels to make ¾ cup cornmeal
Combine: ¾ c. cornmeal, 1 ¼ c. flour (I used whole wheat), ¼ c. sugar, 2 tsp. baking powder, ½ tsp. salt
Add: 1 c. milk, ¼ c. veg. oil, 1 large egg, beaten; stir until dry ingredients are moist
Bake: At 400 degrees F for 20 to 25 minutes or until a toothpick inserted in the middle comes out clean
